Description

The Butcher is responsible for weighing, cutting, preparing, and serving meat while attending to our customers and ensuring all displays and equipment are clean and sanitized.  Health and safety regulations must be followed extremely carefully in the meat department, they must have excellent attention to detail to ensure every cut of meat is up to quality standards.  


Requirements

  • Previous experience as a meat cutter or in a meat department position in a professional environment  
  • Good communication skills and ability for teamwork 
  • Food Workers Card  
  • Meat Cutters License 
  • Have reliable commute to work  
  • Physical: must be able to stand and move around during the day, lift and carry up to 30 lbs. 
  • Language: Understand and speak English and Spanish 
  • Must be able to work a flexible schedule, especially around holidays and weekends 
  • Know how to properly use and maintain meat department machinery such as slicers, scales, etc. or willingness to learn  
  • Have experience and knowledge of basic cuts of meat for cow, sheep, pig, etc.  
  • Have experience with basic knife cutting techniques (Slicing, filleting, cutting, etc.)

Responsibilities

  • Maintaining an active Food Workers Card* 
  • Maintaining an active Meat Cutter License** 
  • Have a positive attitude towards safety, follow all health and safety regulations and/or policies to ensure the well-being of others and self  
  • Attend work with company provided uniform and have a tidy appearance which includes trimmed nails 
  • Weigh, cut, and slice meat according to manager specifications and client preferences 
  • Fulfill special meat orders with detail to specific cuts and preparation 
  • Advice customers on the different cuts of meat, preparation, and other questions they may have 
  • Debone, fillet, and prepare cuts of meat in a wide variety according to quality standards   
  • Label all meat products correctly with essential information such as price, date packaged, and date of expiration  
  • Package meat in a safe and attractive way for all display cases   
  • Complete daily checks for meat quality, checking expiration dates, and cleaning all display cases 
  • Make sure all workspaces, equipment, and meat storage areas are sanitized and cleaned consistently 
  • Keep an accurate and precise inventory of meat and supplies to ensure there is enough for day-to-day operations and special orders, report anything needed to store manager 
  • Weigh and register any losses, consistently rotate all stock of meat to ensure freshness and keep losses to a minimum 
  • Receive and quality check all meat shipments to guarantee freshness 
  • Supervise meat cutter assistants to ensure the meat department is running smoothly 
  • Complete other tasks as needed under the manager’s instructions
